I’m the author of Reclaiming Flavor, a high-protein comfort food cookbook created for people who want healthier meals without giving up the foods they actually love. After losing over 160 pounds through sustainable lifestyle changes, realistic nutrition, and rebuilding comfort food into protein-packed versions that still taste incredible, I realized healthy eating didn’t have to feel miserable.

Reclaiming Flavor was built from real life, not perfection. Crispy Air- Fried High Protein Potatoe Cakes

Crispy on the outside, tender on the inside, these high-protein potato cakes make an easy side dish, meal-prep staple, or foundation for endless topping combinations.

🥔 High-Protein Crispy Golden Potato Cakes

These crispy golden potato cakes start with a full package of Manischewitz Potato Pancake Mix, boosted with sour cream & chive protein potatoes, eggs, and Fairlife milk for extra protein and flavor. The result is a hearty, diner-style potato cake with a crispy exterior and tender center.

Enjoy them as a simple breakfast side, or use them as a versatile base for Buffalo Chicken, Philly Cheesesteak, Loaded Bacon Ranch, Taco, Pizza, or Breakfast-style variations. One recipe, endless comfort-food possibilities.

Ingredients

  • 1 package Manischewitz Potato Pancake Mix
  • ½ package Sour Cream & Chive Protein Mashed Potatoes
  • 2½ cups Fairlife milk
  • 2 large eggs
  • ⅓ cup Mexican blend shredded cheese
  • 3 tablespoons bacon bits
  • ¼ cup caramelized onions (or more to taste)

Instructions

  1. In a large mixing bowl, combine the Manischewitz Potato Pancake Mix, Sour Cream & Chive Protein Mashed Potatoes, Fairlife milk, eggs, Mexican blend cheese, bacon bits, and caramelized onions.
  2. Stir until well combined.
  3. Let the mixture sit for 5-10 minutes, or until it thickens into a scoopable batter.
  4. Preheat your air fryer to 375°F.
  5. Generously spray a dark-colored air fryer pan or basket with cooking spray. Using a dark pan helps create a crispier, more golden exterior.
  6. Scoop the mixture into potato cakes and place them on the prepared pan. Lightly flatten each cake.
  7. Spray the tops generously with cooking spray.
  8. Air fry for 8-10 minutes, then carefully flip the potato cakes.
  9. Spray again with cooking spray and continue cooking for an additional 6-10 minutes, or until the cakes are crispy and golden brown on both sides.
  10. Serve as-is or use as a base for your favorite variations, including Buffalo Crack Chicken, Philly Cheesesteak, Loaded Bacon Ranch, or Breakfast-style toppings.

BaySnax Tip 💖

Don't skip the resting time. Letting the batter thicken before cooking helps the cakes hold together and creates the perfect crispy-outside, tender-inside texture.

Do not skip the dark-colored air fryer pan. A dark pan absorbs and distributes heat better, helping the potato cakes develop a crispy, golden crust. When tested in a lighter pan, the cakes browned much more slowly and never achieved the same crisp texture.

For best results, generously spray the pan before cooking, spray the tops of the cakes, flip halfway through cooking, and spray again after flipping. This extra step is the secret to getting that crispy diner-style finish.

High Protein Crack Chicken Spicy Queso Crunch Bake

    This casserole contains chicken, bacon, ranch, cheese, queso Wilde chips, and absolutely zero self-control. Loaded with protein and topped with a buttery Spicy Queso crunch, it's the kind of comfort food that makes people ask for the recipe before they've finished their first serving—fair warning: "just a small scoop" is usually a lie.

              Ingredients

              • 3 cups rotisserie chicken, shredded
              • 1 can diced chicken
              • 1 1/2 cups shredded Mexican cheese blend
              • 4 heaping tbsp cottage cheese
              • 3 heaping tbsp FAGE Greek yogurt
              • 3 tbsp whipped cream cheese
              • 3 tbsp light mayo
              • 1 packet Meal Boosters Cheese Protein
              • 3 tbsp nutritional yeast
              • 1 large onion, caramelized
              • Green onions, chopped
              • 6 strips bacon, cooked and crumbled
              • 1½ cups crushed Wilde Spicy Queso Protein Chips
              • 1 tbsp light butter
              • 1 packet ranch seasoning
              • Guy Fieri Garlic butter seasoning
              • Kinders Caramelized Onion Butter seasoning
              • 3 tbsp Worcestershire sauce
              • Cumin
              • About 4 tbsp olive oil (or slightly less) for caramelizing the onion

              Instructions

              1. Preheat oven to 375°F.
              2. Thinly slice the onion and caramelize it in the olive oil over medium-low heat until golden brown and soft. Do not drain the oil. The oil stays in the recipe. Set aside, reserving some of the onions for the potato cakes.
              3. Cook the bacon until crispy. Crumble the bacon and reserve the bacon grease. The bacon grease stays in the recipe.
              4. In a blender, combine the cottage cheese, FAGE Greek yogurt, whipped cream cheese, light mayo, Meal Boosters Cheese Protein, nutritional yeast, ranch seasoning, Worcestershire sauce, cumin, garlic butter seasoning, and butter seasoning. Blend until completely smooth.
              5. In a large mixing bowl, combine the rotisserie chicken, canned chicken, 1 cup shredded Mexican cheese, crumbled bacon, green onions, caramelized onions, the onion oil, and the reserved bacon grease.
              6. Pour the blended sauce over the chicken mixture and stir until everything is evenly coated.
              7. Transfer the mixture to a 9x9 baking dish and spread evenly.
              8. In a skillet, sauté the crushed Wilde Spicy Queso Protein Chips in 1 tbsp light butter until lightly toasted and fragrant.
              9. Sprinkle the toasted chip mixture evenly over the casserole.
              10. Top with the remaining ½ cup shredded Mexican cheese.
              11. Bake for 25–30 minutes, or until hot, bubbly, and the cheese is melted.
              12. Let rest for 5 minutes before serving.
              13. Serve hot and try not to eat half the pan while claiming you're "just checking the seasoning." 🤣🧀

              Notes:

              🤣 Fair warning: "just a taste" is usually how this recipe turns into dinner.

              For extra flavor, do not discard the onion oil or bacon grease. Both are mixed back into the casserole and help create the rich, savory flavor that makes this dish so addictive.

              Some of the caramelized onions are reserved for the potato cakes, but feel free to add more to the casserole if you're an onion lover.

              For a lighter version, reduce the shredded cheese and replace part of it with Meal Boosters Cheese Protein.

              As with most Andrea recipes, the cottage cheese and FAGE are blended until smooth first. Nobody needs surprise cottage cheese chunks in comfort food.
