If you’ve followed my recipes for more than five minutes, you’ve probably noticed that Costco rotisserie chicken shows up in everything but dessert.
There’s a reason for that.
For about the price of a drive-thru meal, I can bring home a fully cooked chicken and turn it into multiple meals throughout the week. As a busy single mom, full-time student, recipe creator, and someone who worked incredibly hard to lose 160 pounds, I’m always looking for ways to make healthy eating easier without spending my entire life in the kitchen.
Don’t get me wrong. I love cooking.
I just don’t love standing in the kitchen at 8:00 at night wondering what I’m making for dinner while staring into the refrigerator like it owes me answers.
That’s where rotisserie chicken comes in.
One chicken can become several completely different meals that never feel repetitive.

One day it’s chicken salad. The next day it’s tucked into a wrap. The day after that it’s hiding inside a casserole pretending to be a completely different meal.
It’s basically the undercover agent of my refrigerator.
One of the biggest lessons I’ve learned during my weight-loss journey is that healthy eating doesn’t have to be complicated. Sometimes the smartest thing you can do is find shortcuts that help you stay consistent.
Costco rotisserie chicken is one of those shortcuts.
It saves time. It stretches my grocery budget. It helps me hit my protein goals. And on the days when life is chaotic, it keeps me from ending up in a drive-thru because I’m too tired to cook.
Honestly, at this point Costco rotisserie chicken has appeared in so many of my recipes that it probably deserves its own contributor page on the blog.
And if Costco ever stops selling them, I may need a support group.
