These enchiladas almost never happened.

Somewhere in the middle of making them, I was convinced I’d lost my favorite Spanglish Asadero seasoning. I searched the kitchen, accused poor Fritzy of knocking it off the counter and batting it into another dimension, and finally gave up and ordered another bottle on Instacart.

A little while later…guess where I found it?

In the bathroom.

Don’t ask me how. I still don’t have an explanation.

By then I’d already walked laps around the house looking for ingredients, forgotten the cilantro, second-guessed myself at least three times, and seriously questioned whether enchiladas were worth this much drama.

Then they came out of the oven.

Kiki took one bite and said, You should’ve just paid the $25.

I laughed because the restaurant version would’ve blown my calories for the day. These didn’t.

Instead, these High Protein Green Chile Chicken Enchiladas are stuffed with tender rotisserie chicken, creamy blended cottage cheese and Greek yogurt, mild green chiles, and just enough melted cheese to make every bite feel indulgent. Topped with warm Mama Queso Green Chile Cheese Dip, they have all the comfort of restaurant enchiladas while packing 44 grams of protein per serving.

So yes…they caused a little chaos in my kitchen. But after one bite, I’d make them all over again…although next time I might check the bathroom for my seasonings first. 😉

Ingredients

  • About ½ Costco rotisserie chicken, shredded
  • 3 Real Good Foods burrito-size protein wraps
  • 1 cup reduced-fat Mexican blend shredded cheese
  • 1 cup fat-free cottage cheese, blended
  • 1 cup Fage 0% plain Greek yogurt
  • 3 Happy Farms Spicy Pepper Spreadable Cheese Wedge or Laughing Cow
  • 1 (10 oz) can green enchilada sauce
  • 1 (4 oz) can diced green chiles
  • 2 to 3 tablespoons Spanglish Asadero Tex-Mex Chicken & Steak Seasoning
  • 1 tablespoon ground cumin
  • 1 tablespoon onion powder
  • Squeeze of Lime Juice
  • Mama Queso Green Chile Cheese Dip

Instructions

  1. Preheat oven to 350 degrees. Lightly spray a casserole dish with nonstick cooking spray.
  2. Add the cottage cheese, Fage Greek yogurt, Laughing Cow cheese, Spanglish Asadero Tex-Mex Chicken and Steak Seasoning, cumin, onion powder, and a squeeze of fresh lime juice to a blender. Blend until completely smooth.
  3. Add the shredded chicken, blended cheese mixture, and diced green chiles to a large mixing bowl. Stir until well combined.
  4. Divide the filling between 3 Real Good Foods burrito-size wraps. Roll them up and place them seam-side down in the prepared casserole dish.
  5. Pour half of the green enchilada sauce over the enchiladas.
  6. Spoon 1 1/2 cups of Queso Mama Green Chile Cheese Dip over the top.
  7. Sprinkle the remaining 1/3 cup of Mexican cheese over the top.
  8. Bake for about 30 minutes, or until hot and bubbly, and the cheese is melted.
